If meat is expensive, veggies can take the starring role, and be JUST as delicious!Long before “budget meals” became a trend, German home cooks were already masters at stretching ingredients, reusing leftovers, and turning the simplest pantry staples into meals that filled bellies and brought everyone back to the table. That’s the kind of cooking I grew up with, and it’s the kind I still cook today.
In a German kitchen, a few basics go a very long way. Potatoes. Onions. Cabbage. Eggs. Flour. Broth. Add a bit of butter, a good pot, and some patience, and suddenly you have dinner. And tomorrow’s lunch. And sometimes even dessert.
Common ingredients that can make a meal last longer, and help extend leftovers!A pot of soup becomes thicker the next day. Leftover potatoes turn into Bratkartoffeln or Bauernfrühstück. Stale bread becomes Arme Ritter. A single chicken stretches into soup, fricassee, and a hearty skillet meal without anyone feeling shortchanged.
This is not “sad food.” This is real comfort food.

Broth and seasoning do the heavy lifting. And nothing is wasted unless you truly forgot it in the back of the fridge. Even then, Mutti would have had a word with you.
